Apple Oat Protein Cookies

These fall inspired cookies had my home smelling so delicious and cozy. I hope you enjoy them.

This recipe makes 10 delicious cookies

Ingredients:

  • 1 egg 
  • 1/2 cup egg whites
  • 1 tsp nutmeg 1 tsp cinnamon 1 tsp pumpkin spice 
  • 1/2 cup unsweetened applesauce 
  • Brown sugar substitute, I used golden monk fruit 180g
  • 1/4 cup no sugar added maple syrup 
  • 1/2 tsp Himalayan salt
  • 1/4 cup natural Pb 
  • 1/2 tsp baking soda
  • 3/4 cup coconut flour 
  • 1 cup oats 
  • 2 scoops protein (I used Dymatize ISO100 gourmet chocolate and one scoop cinnamon bun)

Directions:

  • Preheat oven to 350
  • Mix ingredients well together 
  • Then fold in 1 peeled chopped apple 
  • 1/4 cup chopped walnuts 
  • Place 10 scoops on a lined baking sheet to bake for approximately 16-18 min 
  • Remove to cool for 10 minutes and enjoy!
